Crowd Pleasing BBQ Nachos
Protein packed tangy nachos
ingredients
- 1 bag tostitos hint of lime chips
- 1 rotisserie chicken
- 8 oz shredded jack cheese
- BBQ sauce
- small can sliced black olives
- 1 medium tomato
- 6 oz fresh sliced mushrooms
- 1 small yellow onion
- 1 small green pepper
- shredded lettuce
directions
In pan with oil take diced green pepper and onion and saute. When they begin to wilt add mushrooms. Cook until soft. On large plate put lime chips and cover with about half the cheese. Microwave very briefly to melt cheese on chips. Then add sauteed veggies along with meat of the chicken and as much of the BBQ sauce as is pleasing. Top with olives, tomatoes and lettuce along with the remainder of the cheese. On the side you can have salsa, sour cream and guacamole if you like.
