Gene’s signature award winning chili
3T Ancho chili powder & 3T New Mexico Chili Powder
2T Cumin seeds, pan toasted & ground
2t Mexican oregano
2 lbs chuck roast, fat trimmed & cut into 1" cubes
2lbs pork shoulder roast, fat trimmed & cut into 1" cubes
8 slices bacon cut into ¼ inch pieces
1 large onion
5 med garlic cloves minced
5 sm fresh jalapenos (minced)
1 can crushed tomatoes
2 T lime juice
1 oz unsweetened chocolate, small pieces
5T masa harina (corn flour)mixed with ¼ cup water
-Fry bacon til crisp, remove bacon & saute meat in bacon fat-then remove meat & saute onion til softened, then add garlic & jalapenos for 3 minutes, then remove & reserve & deglaze pan with ¼ cup wine & reduce til thick, then add the chocolate & melt
-in heavy dutch oven, put all the sauteed ingredients, the spices, the crushed tomatoes, lime juice and chocolate and 7 cups of water, bring to a simmer then transfer to a 300° oven & cook covered for 2 hrs, then uncovered for another hour or until meat is very tender
-put on stovetop, medium heat & add masa harina & cook to thicken
-Serve with typical chili condiments: cheese, onions, olives, and Jan likes roasted corn too.

Gene makes his own chili powder by placing dried chilis on baking sheet in 350 oven for 6 minutes. (They will be puffed and fragrant.)Cool, stem, seed, cut into pieces and process in a coffee grinder til powdery. (about 1 minute)
