Mom's Fruit Bars
Mom always had these ready for us when we came home from college or at holidays!
ingredients
- 2 1/3 C sugar
- 2 tsp salt
- 4 tsp baking soda
- 1 C plus 3 T shortening
- 3 eggs
- 4 1/2 C flour
- 1/2 C honey
- 2 T water
- 4 tsp cinnamon
- 4 tsp vanilla
- 1 1/2 C raisins
- 1 1/2 C dates
- 2 C nuts (walnuts or pecans)

Mix sugar, shortening, water, honey, vanilla, and eggs. Add salt, soda, cinnamon, and flour that are mixed together. Stir in raisins, dates and nuts.

Form into long thin rolls on an ungreased cookie sheet and flatten slighty with rolling pin (about three inches across and the length of the cookie sheet; two rolls per sheet). Brush with egg and milk mixture before baking.

Bake at 350 degrees till golden and puffy. Check after 10 and 15 minutes—watch these. After removal from oven the puffiness will go down. Cool.
