Hearty Beef Enchiladas
Delicious Mexican entree to serve at home.
ingredients
- 2 lbs ground beef
- 2 medium onions, chooped
- 2 cans (15 1/2 oz each) chili beans, undrained
- 2 cans (10 oz each) enchilada sauce, divided
- 1 jar (8 oz) salsa, divided
- Vegetable oil
- 14 corn or flour tortillas, 8 inches
- 2 cups (8 oz) shredded cheddar (or Mexican blend) cheese
- 1 can (2 1/4 oz) sliced ripe olives, drained

Cook beef and onions over medium heat until meat is no longer pink; drain. Stir in beans, 1 can of enchilada sauce, and 1/2 cup of salsa; set aside.

Heat 1/4 in. of oil. dip each tortilla in hot oil for 3 seconds on each side or just until limp; drain on paper towels.

Top each tortilla with 2/3 cup of beef mixture. Roll and place seam side down in baking dish. Drizzle with remaining enchilada sauce and salsa. Sprinkle with cheese and olives.

Bake uncovered at 350 for 20 - 25 minutes or until bubbly.
notes
If you like your enchiladas cheesy, get extra shredded cheese and put inside the tortillas, as well. The original recipe doubled the amount of ingredients and served 28, so if you're cooking for a crowd, this is a good one!
