Wendy & Larry's BLT Quiche
This is an easy brunch/comfort food. It is great to bring to person’s recovering from anything that ails them to a main course at an afternoon baby shower.
ingredients
- 2 pie crusts homemade or store bought
- 10 large eggs
- 6 oz. washed and dried spinach
- 8 oz. shredded cheddar cheese
- 1 package center cut pork or turkey bacon
- 4 medium-sized tomatoes
- 1/2 cup condensed 2% milk(unsweetened)-or may substitute with half n half
- white pepper to taste
- ground sea salt to taste

Set oven at 350°. Place pie crusts in pie pan. Lightly spray pie crusts with baking spray such as PAM. Place in oven for 10-15 minutes until lightly browned, then remove from oven and set aside.

While pie crusts are browning cut bacon of choice into 1 inch strips and brown until slightly crisp. Drain bacon well. Divide bacon evenly between pie pans.

Wilt spinach in pan- use lightly spray spinach or add small pat of butter to pan. Divide between pie pans.

Fill pie pans in to top with cheddar cheese.

Mix eggs and milk and beat until well-blended. Pour into pie crusts until 1/2 inch from top of crust. Pies will rise as they cook.

Sprinkle on white pepper to taste and lightly dust with small amount of coarse sea salt.

Make 1/4 inch to 1/3 inch tomato slices and place in decorative design on top of pies. Bake for 45 minutes.
