Chorizo Stuffed Pork Chops with Carrot-Sweet Potato Hash
Pork stuffed with spicy pork. You do the math. It’s on point.
ingredients
- 4 Thick Cut Pork Loin Chops
- 1 Sweet Potato and 1 Russet Potato or 2 Medium Yellow-Skinned Potatoes
- Half a Bag of Baby Carrots (Cleaned and Peeled)
- Fresh Cilantro
- 1/2 pound of Chorizo Sausage
- 3 Cloves Marinated Garlic
- 1 Medium Vidalia/Red Onion
- Tomatillo Sauce
- Mixed Queso Cheese
- *Glaze for Chops***
- Dried Garlic/Dried Onion/Dried Parsley Seasoning Mix
- Sweet Hungarian Paprika
- Zatarains Blackened Seasoning (at end to dust)
- Sea Salt
- Pepper
- 1 tsp Chili Powder
- 1 tsp Garlic Powder
- 1 tbsp Dijon Mustard
- 1 tbsp Worcestershire Sauce
- 2 tbsp Olive Oil

Mix and brush over and in the stuffing slit of the pork chops and let sit for 2 hours or overnight.

Slice your taters no thicker than 1/8 inch, and put them in water until rest of prep is done to keep them from browning up.

Get some aluminum foil and stack the potato mix, butter, cilantro, onions, and carrots up, and seal off the packet for roasting.

Brown your chorizo, and stuff it into pork chops. Secure chops with small skewer. Bake for 30 minutes
