Veggie Chili
ingredients
- 2 cloves minced garlic
- 1 large green pepper, chopped
- 1/2 pound sliced mushrooms
- 1/2 cup chopped onion
- 2 tablespoons oil
- 1 can (28 ounces) crushed tomatoes with puree
- 1 can (15 ounces) tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 2 cans (15 ounces) drained kidney or pinto beans (or one of each)
- 1 1/2 cups diced zucchini
- 1 (10 ounces) package frozen corn, thawed
directions
Cook and saute first 5 ingredients until tender. Add and heat to a boil next 4 ingredients. Reduce heat to low and add last 3 ingredients. Let simmer.
