Roasted Fennel by Jan
ingredients
- 1 large fennel bulb
- Olive oil
- 1/2 cup grated Parmesan (on microplane grater)
directions
Slice fennel bulb lengthwise into 1/4 inch slices. Place in an oiled baking dish. Drizzle with olive oil, and top with grated parmesan. Bake at 400 degrees for about 30 minutes, or until fennel pierces easily with a fork and parmesan is golden brown.
notes
great with roasted meats. When fennel is cooked it is very mild in flavor.
