Low-Calorie Cheesecake
Can’t imagine how many times I made this all time favorite cheesecake. Instead of using cream cheese, like so many recipes call for, this one calls for cottage cheese. I also use this recipe for the bottom of the pumpkin cheesecake.
Beat cottage cheese with electric beater until almost smooth. Add eggs, salt and sugar; until blended. Add flour, sour cream, lemon juice and vanilla; mix well. Crush graham crackers finely; mix in cinnamon. Spread crumbs evenly over bottom of 9x13 inch pan if using this for a
torte [like the pumpkin torte], otherwise pour in a 9x9 inch pan. Spoon cheese mixture carefully over crumbs. Bake at 300° for 1 hr. Serve thoroughly chilled. If you want, you can reserve some crumbs to sprinkle over the cheese mixture before baking.
