White Bean Turkey Chili
ingredients
- 1 C chopped onions
- 1 clove garlic, minced
- 1 T vegetable oil
- 1 lb ground turkey
- 1 C chicken broth
- 1 (14 1/2 oz) can stewed tomatoes
- 1/3 C Dijon mustard
- 1 T chili powder
- 1/8 t ground red pepper
- 1 (15 oz) can cannelloni beans, rinsed and drained
- 1 (8 oz) can corn, drained
- Tortilla chips, shredded cheddar cheese, and sour cream (optional)

In a 3-quart saucepan, over medium heat, sauté onions and garlic in oil until tender. Add turkey; cook until no longer pink, stirring occasionally to break up meat. Drain. Stir in chicken broth, tomatoes, mustard, chili powder, and pepper. Heat to boil; reduce heat. Simmer 10 minutes. Stir in beans and corn and cook for 5 minutes. Top with cheese, sour cream, and tortilla chips.

Makes 6 servings

Instead of ground turkey, you can use up those Thanksgiving leftovers.
