Chicken & Feta Tostadas with Caramelized Red Onions
A nice light dinner - great with a green salad or fresh fruit.
ingredients
- 3/4 lb roma or cherry tomatoes, chopped
- 1/2 C black olives, chopped
- 1/4 C fresh parsley, chopped
- 1 lb cooked chicken, shredded
- 1/2 t salt
- 1/2 t fresh ground black pepper
- 2 T red wine or balsamic vinegar
- 3 T olive oil, plus more for brushing tortillas
- 1/2 lb feta, crumbled
- 3/4 C carmalized red onions
- 8 small tortillas

Heat oven to 450 degrees F.

In large glass bowl, combine tomatoes, olives, chicken, salt, pepper, vinegar, and 3 tablespoons of oil.

Brush tortillas on both sides with oil. Place tortillas on baking sheet overlapping if necessary.

Bake tortillas until they start to brown, about 2-3 minutes. Turn tortillas and brown other side.

Remove tortillas from oven and top each tortilla with feta. Return to oven and cook until cheese begins to melt, about 1 – 2 minutes.

Remove tortillas from oven and top with caramelized onions and chicken mixture.
