Wilted Cabbage Slaw with orange sesame dressing
I would sometimes use this for the second course on Thanksgiving.
ingredients
- 1 small head green cabbage, about 1 1/4 lbs. thinly sliced
- 4 green onions, slivered
- 1/4 c. minced fresh cilantro or parsley
- 1/3 c. vegetable oil
- 3 T. rice vinegar
- 1 T. honey mustard
- 2 t. sesame seeds
- 1/2 t. salt or grated rind of 1 orange
- 2 - 3 T. orange juice
- red cabbage leaves or red leaf lettuce for serving

Mix cabbage, onions and cilantro in a bowl; set aside.

Whisk oil, vinegar, mustard, sesame and mustard seeds and salt together in a small pan. Heat gently until the seeds begin to brown. Remove from the heat, add orange rind and juice. Pour over cabbage mixture. Toss well.

Salad can be served immediately or covered tightly and refrigerated overnight. Toss well and adjust the seasoning before serving on cabbage or lettuce leaves.
