Lemon Pie
Sonna Lea’s backyard lemons make this pie THE BEST ever!~
ingredients
- Stir in sauce pan over low heat until thick:
- 1 1/3 C sugar
- 1/2 C corn starch
- 1/4 tsp. salt
- 1 3/4 C water (reserve 1/2 C)
- Add the reserved 1/2 C water to 4 egg yolks and mix together. Add this to the somewhat cooled thickened ingredients above and cook two minutes. Remove from heat and add 2 T butter. Add 1 T lemon rind grated. Add 1/2 C lemon juice. When stirred in, blend then boil 1 more minute. Place in baked pie shell.

Cook till boils clear:

1 T. corn starch

1/2 C water

Beat 3-4 egg whites to soft peaks, add 1/2 t salt and 1/2 t lemon juice. Gradually add mixture from above, then add gradually 6 T sugar. Beat till stiff. Place over lemon pie. Seal edges of meringue on top of pie. Bake 400 degrees for 8-10 minutes.
