Grandma Capone's Eggplant Parmesan

ingredients

  • 1 large eggplant sliced 1/2" thick
  • 2-3 eggs, beaten
  • 1 cup of flour
  • 1 cup of breadcrumbs
  • Olive oil or canola oil
  • Marinara sauce
  • Mozzarella sliced
  • Parmesan and/or Romano, grated

directions

Peel and slice eggplant. Dip each slice in flour, then egg mixture, then breadcrumbs. Fry eggplant in hot oil, turn, until golden and crisp. Using rectangular casserole dish layer sauce on the bottom, eggplant, mozzarella, grated cheese. Repeat ending with sauce, cheese and mozzarella on top. Bake about 30-45 minutes in 350° oven.
