Jiffy corn souffle
I don’t know if this should really be considered a “vegetable.” But it’s a delicious and easy side dish!
ingredients
- 1 pkg, Jiffy Corn Bread Mix
- 8 oz. sour cream
- 2 eggs (beaten)
- 1/2 c. melted butter
- 1 can whole kernel corn, undrained
- 1 can cream style corn
- 1/4 c. frozen corn
- 1/2 tsp. salt
- 1/2 tsp. pepper

Melt butter in 2-quart casserole dish.

Add beaten eggs, corn, and remaining ingredients. Mix well.

Bake at 350 for 1 hour.
