Southwestern Eggrolls
ingredients
- Chicken Breast
- 1T. Vegetable Oil
- 2 T. Red Bell Pepper
- 2 T. Minced Green Onion
- 1/3 Cup Frozen Corn
- 1/4 Cup Canned Black Beans, rinsed
- 2 T. Frozen Spinach
- 2 T. Diced Jalapeno Peppers
- 1/2 T. Minced Parsley
- 1/2 tsp. Cumin
- 1/2 tsp. Chili Powder
- 1/4 tsp. Salt
- 3/4 Cup Monterey Jack Cheese
- 5 (7-inch) Tortillas

Grill Chicken, then saute the red pepper, onion with chicken. Add everything else and roll up in tortillas. Hold them together with a toothpick. Wrap with plastic and freeze for at least 4 hours or overnight.

Deep fry rolls for 12 to 15 min.

Avocado-Ranch Dipping Sauce:

1/4 Cup smashed, fresh avocado (about half of an avocado)

1/4 Cup Mayonnaise

1/4 Cup Sour Cream

1 T. Buttermilk

1 1/2 tsp. White Vinegar

1/8 tsp. Salt

1/8 tsp. Parsley

Combine all ingredients together.
