Spice-Rubbed Pork Tenderloin with Mustard Chutney
This is also great using pork chops in place of the pork tenderloin.
ingredients
- 1 teaspoon brown sugar
- 3/4 teaspoon chili powder
- 3/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1 (1-pound) pork tenderloin, trimmed
- Cooking spray
- 1/2 cup prepared mango chutney
- 2 tablespoons spicy brown mustard

Preheat oven to 425°

Combine first 8 ingredients (brown sugar through dried thyme). Rub pork with spice mixture; refrigerate for 20 minutes or more.

Place pork on a broiler pan coated with cooking spray. Bake at 425° for 20 minutes or until a meat thermometer registers 155 to 160°. Let stand 5 minutes; cut into 1/4-inch slices.

Mix together mango chutney and mustard. Serve with pork.
