Linguine with Shrimp and Lemon Oil
A decedent dish to serve at a dinner party.
ingredients
- 1 lb. linguine pasta
- 2 tbls olive oil
- 2 shallots, diced
- 2 garlic cloves, minced
- 16 oz frozen shrimp
- 1 lemon, zested
- 1 tsp salt
- 1/2 tsp fresh ground pepper
- 1/4 cup chopped flat-leaf parsley
- 1/4 cup lemon juice, (2 lemons)
- 1/2 cup Extra Virgin Olive Oil
- 1 lemon zested

Combine EVOO and lemon zest in a small bowl and set aside.

Cook pasta as directed and reserve 1 cup of cooking liquid. In a large, heavy skillet, warm olive oil over medium heat. Add shallot and garlic. Cook 2 minutes. Add shrimp and cook 5 minutes. Add cooked linguine, lemon juice, lemon zest, salt and pepper. Toss to combine. Strain lemon zest from oil that was set aside and add over linguine. Add parsley to garnish.
