Julie’s Butternut Squash Soup
Julie’s a great friend and a great cook. This is a snap and waaaaay delicious.
ingredients
- 2 bags of pared, diced Butternut squash
- 1 large yellow onion, quartered
- 2 Fuji apples, quartered, seeded but with skin remaining
- 3 cups of chicken stock or broth
- olive oil
- 1 tsp nutmeg (or more)
- salt & pepper
- Toppings:
- Toasted walnuts
- Crumbled blue cheese
