ingredients

  • 2 bags of pared, diced Butternut squash
  • 1 large yellow onion, quartered
  • 2 Fuji apples, quartered, seeded but with skin remaining
  • 3 cups of chicken stock or broth
  • olive oil
  • 1 tsp nutmeg (or more)
  • salt & pepper
  • Toppings:
  • Toasted walnuts
  • Crumbled blue cheese
