Spaghetti Squash Casserole
This is a quick, easy, delicious, and healthy meal. I use pre-made spaghetti sauce to save time. Its perfect for busy fall or winter nights, and it makes a lot so you have leftovers for lunches! Lys: "It is great- and nice and light- a nice substitute for a heavy pasta caserole
ingredients
- 1 medium sized spaghetti squash
- 1 white onion
- 2 cups quartered mushrooms
- 1 package ground turkey
- 1 jar spaghetti sauce (whatever flavour you like)
- A block of mozzarella cheese
directions

-With a little oil, cook the onions and mushrooms over medium high heat until soft, salting/peppering liberally. Once soft, remove to bowl.

-Cook ground turkey, draining fat, and add onion and mushroom mixture and the sauce. Let simmer, add salt and pepper to taste. I add a lot of pepper.

-Meanwhile, slice the squash down the middle, remove seeds, rub with olive oil, and cook in 400F oven for about an hour. Once done, use a fork to scrape the spaghetti like strands away from shell, and place in pan with the turkey sauce mixture.

-Pour a layer in a casserole dish, cover with grated cheese, and repeat, until its all gone. Cover with cheese, cook in oven to brown the cheese, and you are done.
