Thai Beef Salad

ingredients

  • 2 tbsp peanut oil
  • 2 cloves garlic, peeled and finely chopped
  • 3/4 pound beef flank steak, sliced thinly across the grain
  • For the marinade
  • 1/2 cup peeled and thinly sliced onion
  • 1/4 cup fresh lime juice
  • 1/4 cup thai fish sauce
  • 10 fresh mint leaves
  • 1/2 teaspoon sugar
  • 1/2 teaspoon red chili paste
  • Garnish
  • 2 cucumbers, unpeeled, thinly sliced
  • chopped scallions
  • fresh cilantro leaves

    Heat the oil in a wok and add the garlic for a moment.

    Add beef slices and sear 1 - 2 minutes. Place the meat in a bowl and add marinade ingredients. Toss and chill well.

  • 3

    Make a bed of cucumber slices on a platter. Put the meat and marinade on top and add remaining garnishes. Chill again before serving.
