Thai Beef Salad
ingredients
- 2 tbsp peanut oil
- 2 cloves garlic, peeled and finely chopped
- 3/4 pound beef flank steak, sliced thinly across the grain
- For the marinade
- 1/2 cup peeled and thinly sliced onion
- 1/4 cup fresh lime juice
- 1/4 cup thai fish sauce
- 10 fresh mint leaves
- 1/2 teaspoon sugar
- 1/2 teaspoon red chili paste
- Garnish
- 2 cucumbers, unpeeled, thinly sliced
- chopped scallions
- fresh cilantro leaves

Heat the oil in a wok and add the garlic for a moment.

Add beef slices and sear 1 - 2 minutes. Place the meat in a bowl and add marinade ingredients. Toss and chill well.

Make a bed of cucumber slices on a platter. Put the meat and marinade on top and add remaining garnishes. Chill again before serving.
