Ritz Cracker Oven-Fried ChickenSusan
- 3 1/2 pounds chicken parts
- 2 large eggs
- 1/4 cup milk
- 2 1/2 cups crushed ritz crackers
- Salt and pepper to taste
Preheat the oven to 350. Lightly oil a baking sheet.
Whisk together milk and eggs. Combine crackers, salt and pepper. Dip chicken pieces in the egg mixture, then coat with the cracker mixture, patting to make the crumbs adhere.
Arrange the chicken skin side up on baking sheet. Bake until the chicken is crisp and golden, 45 to 60 minutes.
