ingredients

  • 2 tablespoons of flour
  • 2 teaspoons of salt
  • 1/4 teaspoons of pepper
  • 3 or 4 lbs. of beef roast, cut 2" thick(blade or arm pot roast)
  • 2 tablespoons fat or oil
  • 1 medium yellow onion sliced
  • 3 peppercorns(optional)
  • 1 small bay leaf
  • 1 cup of water

    Combine flour, salt and pepper

  • 2

    Rub into surface of meat

  • 3

    Heat fat in electric skillet or Dutch oven over surface heat

  • 4

    Brown meat on one side and add onion, pepper and bay leaf

  • 5

    Turn meat over and brown the other side

  • 6

    Place meat on flat lower rack

  • 7

    Add water and cover

  • 8

    Cook slowly for 2 hours and add water as needed

Grammy used to cook sliced potatoes in with the roast as well.
