Grammy Peralta's Pot Roast
ingredients
- 2 tablespoons of flour
- 2 teaspoons of salt
- 1/4 teaspoons of pepper
- 3 or 4 lbs. of beef roast, cut 2" thick(blade or arm pot roast)
- 2 tablespoons fat or oil
- 1 medium yellow onion sliced
- 3 peppercorns(optional)
- 1 small bay leaf
- 1 cup of water

Combine flour, salt and pepper
- 2
Rub into surface of meat
- 3
Heat fat in electric skillet or Dutch oven over surface heat

Brown meat on one side and add onion, pepper and bay leaf
- 5
Turn meat over and brown the other side

Place meat on flat lower rack
- 7
Add water and cover
- 8
Cook slowly for 2 hours and add water as needed

Grammy used to cook sliced potatoes in with the roast as well.
