Irish Potato Soup
This is a very tasty and quick soup to make.
ingredients
- 2 Tbs butter
- 1 sm onion, chopped
- 1 bay leaf
- 1/2 tsp thyme
- 1 1/2 potatoes, 1/2" cubed
- 2 cans chicken broth
- salt & pepper
- 1 cup milk
- spiced crouton’s
- try adding bacon pieces and cheddar cheese on top.

Melt butter add onions,bay leaf and thyme. Cook until onions translucent.

Add potatoes, broth, salt & pepper, simmer 15 minutes until potatoes are tender.

Take about 1/2 of the potatoes & onions and puree them, then put back into pot.

Add milk,stir and heat to almost a boil.

** Once put into bowls add chopped bacon, cheese and croutons.
