Kale with Pancetta and Peppers
One of my daughter’s favorite greens. A great way to prepare this wonderful green.
ingredients
- 1 large bunch (1to 1 1/2 lbs) Kale with ribs removed and sliced into strips
- 1 Medium Onion Chopped
- 1 red pepper chopped
- 1 tbsp olive oil
- 1 tsp crushed garlic
- 4 to 6 slices Pancetta (Italian Bacon) sliced into small pieces
- 1/2 cup chicken broth

In large pot, sauté oil, pancetta, garlic, onions, and pepper together until onions are soft.

Then add Kale and sauté until Kale leaves turn bright green. Reduce heat and add chicken broth.

Allow to cook in chicken broth for about 4 - 5 minutes.

Transfer to bowl and serve. May top with Feta Cheese crumbles. Yummy!
