Couscous Salad

For a beautiful, flavorful cold salad and a wonderful variation from the standards, try this easy and delicious couscous.

  • Bring water to boil in a sauce pan. Add couscous, stir, cover, and remove from head. Let stand 5 minutes then fluff with a fork.

  • Small dice bell pepper, squash, and zucchini.

  • Whisk together oil, vinegar, mustard, garlic, cumin, salt and pepper.

  • In a large bowl, toss vegetables, parsley, and dressing. Chill at least 2 hours or overnight.
