Couscous Salad
For a beautiful, flavorful cold salad and a wonderful variation from the standards, try this easy and delicious couscous.
ingredients
- 1 cup dry couscous
- 1 cup water
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- 2 teaspoons spicy mustard
- 1 teaspoon cumin
- 1 cloves garlic, minced
- 1 medium red bell pepper
- 1 medium yellow squash
- 1 medium zucchini
- 1/2 small red onion
- 3/4 cup fresh parsley, chopped
- salt and pepper

Bring water to boil in a sauce pan. Add couscous, stir, cover, and remove from head. Let stand 5 minutes then fluff with a fork.

Small dice bell pepper, squash, and zucchini.

Whisk together oil, vinegar, mustard, garlic, cumin, salt and pepper.

In a large bowl, toss vegetables, parsley, and dressing. Chill at least 2 hours or overnight.
