Banana Split Cake

From Melissa: “This is a recipe that my grandma often makes, usually at my request. It is so delicious, and is by far one of my favorite recipes for dessert. I made this when Beth, Bruce, and the kids came to visit, and also made it recently when my friend, Karen, adopted her son. I didn’t have any left-overs!”

ingredients

  • 2 c. graham cracker crumbs
  • 3 sticks margarine
  • 2 c. powdered sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 4 large bananas, sliced and dipped in lemon juice
  • 1 large can crushed pineapple, well-drained
  • About one pint of Strawberries, thinly sliced
  • 12 oz container Whipped Cream
  • Maraschino Cherries, patted dry
  • 3/4 c. chopped nuts (optional)

directions

To Make: Melt one stick margarine and mix with graham cracker crumbs. Spread crumb crust into the bottom of a 13x9 baking dish. Combine two sticks of margarine, powdered sugar, vanilla, and eggs. Beat for 12-15 minutes at a high speed. Spread this mixture over crust. Layer banana slices over egg mixture and cover them with crushed pineapple. Next, add a layer of strawberries. Cover the strawberries with Whipped Cream and top with Maraschino Cherries and Nuts…Chocolate shavings would also be delicious on top of this recipe. Chill for at least 8 hours and up to 24 hours.
