Ginger Cookies

ingredients

  • 1/2 c. shortening
  • 1/2 c. sugar
  • 1/4 c. molasses
  • 1/4 c. honey
  • 1 egg yolk
  • 2 c. flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 Tbsp. cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. ground cloves
  • 1/2 tsp. ground nutmeg
Icing:
  • 1/2 c. confectioner’s sugar
  • 1/2 Tbsp. melted butter
  • 1/2 Tbsp. milk
  • 1/4 tsp. vanilla extract
  • Liquid food coloring
  • Colored sugars for decorating

    Cream together the shortening, sugar, molasses, and honey in a bowl with an electric mixer. Add egg yolk and mix well.

    Sift the flour, baking soda, baking powder, salt, and spices together. Stir into shortening mixture.

    Wrap dough in plastic and chill well. Roll out dough on a lightly floured surface to 1/4-inch thickness. Cut out shapes with holiday cookie cutters. Transfer to a cookie sheet.

    Preheat oven to 350 degrees and bake for 8 to 10 minutes.

    To make icing beat confectioner’s sugar, butter, milk, and vanilla extract until smooth, adding more sugar or milk if needed. Add liquid food coloring if desired.

    Decorate cookies with icing and sugars of different colors.
