Salmon Croquettes

A Late Breakfast Buffet

ingredients

  • 15-ounce can red salmon, drained
  • 1 medium-sized yellow onion, finely chopped
  • 1 small green or red bell pepper, seeded, chopped fine, or half of each color
  • 1 cup bread crumbs
  • 1 medium-size white potato, boiled, mashed
  • 1 large egg
  • 1 teaspoon ground black pepper
  • 1 cup yellow cornmeal
  • 1/4 cup vegetable oil for panfrying
  • Optional garnishes: lemon slices or wedges, fresh herbs, scallions

directions

In large bowl, combine all ingredients except cornmeal and oil. Divide into 12 small balls; shape into patties. Coat patties with cornmeal. In large skillet, heat oil until hot. Add patties; fry until golden brown on both sides. Place on paper towels to drain; serve hot. Garnish as desired.
