Salmon Croquettes
A Late Breakfast Buffet
ingredients
- 15-ounce can red salmon, drained
- 1 medium-sized yellow onion, finely chopped
- 1 small green or red bell pepper, seeded, chopped fine, or half of each color
- 1 cup bread crumbs
- 1 medium-size white potato, boiled, mashed
- 1 large egg
- 1 teaspoon ground black pepper
- 1 cup yellow cornmeal
- 1/4 cup vegetable oil for panfrying
- Optional garnishes: lemon slices or wedges, fresh herbs, scallions
directions
In large bowl, combine all ingredients except cornmeal and oil. Divide into 12 small balls; shape into patties. Coat patties with cornmeal. In large skillet, heat oil until hot. Add patties; fry until golden brown on both sides. Place on paper towels to drain; serve hot. Garnish as desired.
