So, does Laura like it? You decide. Just spicy enough and a surprise rescue when you have to search for something to eat and haven’t gone shopping.

ingredients

  • 1/3 cup chopped onion
  • 1/4 cup chopped green pepper
  • 2 stalks chopped celery
  • 1/8 cup snipped parsley
  • 1/2 clove garlic
  • 1 cup sour cream
  • 1 tsp curry powder
  • 2 tablespoons butter or margarine
  • Salt and pepper to taste
  • Raisins or currents
  • 1 can tuna or chicken
  • Pecans or other nuts
  • Basmati Rice

directions

    Cook onion, garlic, pepper and veggies in 2 tablespoons butter until tender but not brown.

    Stir in sour cream, curry and salt and pepper. Add one 7 ounce can of “dolphin safe” tuna packed in water. Heat but do not boil. Serve hot with raisins and nuts over Basmati rice. Don’t cook the nuts too long they are better crunchy.

Have you ever been in the house with no groceries and no plan for supper?. Then this is the meal for you. Just dig out that can of tuna in the back of the shelf and any of these ingredients that you have. Almost any combo works. Just remember the curry.
