ingredients

Sweet & Spicy Chicken:
  • 1 medium onion
  • 1 large red chilli
  • 4cm fresh root ginger
  • 550g tomatoes
  • Oil
  • 8 boned chicken thighs
  • 2 garlic cloves
  • 1 cinnamon stick
  • 1/2 tsp ground tumeric
  • 450 ml chicken stock
  • 90ml coconut milk
  • Punnet of baby tomatoes
Lime & Coriander Couscous:
  • 350g French beans (chopped to 1 inch lenghts)
  • 3 limes
  • 225g couscous
  • 325ml chicken stock
  • 3 Tbsp Fresh Coriander (chopped)
  • 2 Tbsp olive oil

Sweet & Spicy Chicken:

  • 1

    1) Slice the onion, finely chop the chilli, peel and grate the ginger. Plunge the tomatoes into boiling water for 10seconds, then into icecold water. Drain, skin and quarter.

    2) Heat oil in a large pan and fry chicken until browned each side. Drain on kitchen paper.

    3) Lower the heat and fry the onion until soft and golden brown (about 10mins). Add the chilli, ginger, crushed garlic, tumeric and cinnamon stick and fry for a further 2-3 mins. Stir in the chicken stock and coconut. Bring up to a gentle simmer, stirring all the time, then bubble for about 5 mins.

    4) Add the chopped tomatoes and return the chicken to the casserole and simmer, uncovered, for about 25mins.

    5) Add the punnet of baby tomatoes 5 mins before the end.

    6) Serve with Lime and Coriander Couscous.

Lime & Coriander Couscous:

  • 1

    1) Cook the beans in boiling, salted water for about 5mins or until tender. drain and refresh under cold running water. Grate the zest from 2 limes and squeeze the juice from them all.

    2) Heat the oil in a saucepan, add the couscous and stir for 30 seconds over the heat. Stir in the chicken stock and lime juice, take off the heat and cover for about 10mins.

    3) Stir in the lime zest, coriander and beans into the couscous, season with salt and pepper.
