Whole-wheat Peanut Butter Waffles
ingredients
- 2 1/4 C whole wheat flour
- 4 tsp baking powder
- 1/2 C creamy peanut butter
- 1 1/2 Tbsp sugar
- 2 eggs, beaten
- 2 1/4 C whole milk
- 1/4 C vegetable oil
- 1/4 tsp kosher salt
- cooking spray or melted butter
directions
In a bowl combine first 8 ingredients. Preheat a waffle iron. When it is hot, spray its surface lightly with the cooking spray or brush it with the butter. Fill a medium-size ladle with batter and pour it onto the waffle iron. Cook until the waffle is golden brown and a toothpick inserted into the middle comes out clean, approximately 3-5 minutes. Serve hot with maple syrup and butter or fresh berries.
