Sun-Dried Tomato Spread with Goat Cheese
ingredients
- 1 cup sun-dried tomatoes (packed in olive oil)
- 1 cup olive oil
- 2 large garlic cloves
- 2 parsley sprigs
- 5 basil leaves or 1 tsp dried leaf basil
- 1 tsp red (cayenne) pepper
- 1 tsp salt
- 1 Tbs sugar
- 2 green onions, coarsely chopped
- 2 (4 oz) or 1 (8 oz) goat cheese rounds
directions
Place tomatoes in a medium container. Add all the remaining ingredients except the goat cheese. Cover container, shake to blend ingredients. Refrigerate 2 days to blend flavors. Before serving, process the ingredients in a food processor until almost smooth. Place goat cheese on serving dish and pour tomato spread over cheese. Serve with crackers.
