Quick Pumpkin Cupcakes

- 1 box yellow or vanilla cake mix
- 2 eggs
- 1 Tbsp. vegetable oil
- 2/3 cup canned pumpkin
- 1 1/2 tsp pumpkin pie spice
- 1 cup water or apple juice

PREHEAT oven to 350 degrees. Spray each muffin cup w/ non-stick cooking spray or use cupcake liners.

BLEND the cake mix w/ eggs, oil, pumpkin, pumpkin spice, and water or juice with a mixer at low speed until moistened. Beat at medium speed for 2 minutes.

SPOON into the prepared muffin pan. Bake 18 min or until done. Cool in pan completely before frosting.
