Yummiest Zucchini-Nut Bread
You don’t have to add the nuts. Sometimes the Menden/Vincoli clan leave the nuts and raisins out!
ingredients
- 2 cups sifted flour
- 2 tsps baking soda
- 1 tsp salt
- 1/4 tsp baking powder
- 3 1/2 tsps cinnamon
- 3 eggs
- 1 cup vegetable oil
- 1 1/2 cups sugar
- 2 cups grated zucchini
- 2 tsps vanilla
- 1 tsp lemon extract
- 1 cup raisins
- 1 cup chopped walnuts or sunflower seeds

1. Sift flour, baking soda, salt, baking powder, and cinnamon into a bowl.

2. Combine eggs, oil, sugar, zucchini, vanilla, and lemon extract in another bowl; beat thoroughly.

3. Sift flour mixture into egg mixture until smooth.

4. Add rasins and nuts or seeds. Stir to combine

5. Pour entire mixture into greased, 9x5 inch lof pans or muffins tins. (Fill muffin tins 2/3 full.)

6. Bake at 350° and 40 minutes if loves, 20 minutes if muffins. They are done if center springs back when they are lightly touched.
notes
For the vegetable oil - you can substitute 1/2 cup apple sauce and 1/2 cup oil. You can also reduce sugar amount to 1 cup and it is just as yummy!
