Creole Black-eyed Peas
ingredients
- 1 cup diced celery
- 1 cup diced bell pepper
- 2 hot peppers, chopped
- 2 cans chopped tomatoes, drained
- 1 cup diced onions
- 1/3 cup vegetable oil
- 3 cans black-eyed peas, juice included
- 2 (10 oz) pkg cut okra (frozen)
directions
Saute celery, peppers and onions in vegetable oil till tender. Place in large saucepan along with remaining ingredients. When mixture comes to a boil, salt to taste, turn down to a simmer and cook until okra is done.
