This is a great treat to make and enjoy with a cup of tea of coffee in the morning.

ingredients

  • 3 1/2 cups all purpose flour
  • 1/4 cup sugar
  • 2 1/4 tsp baking powder
  • 1 cup cold butter
  • 1/2 cup golden raisins,currants, or dried cranberries
  • 2/3 cup milk
  • 1 large egg
  • 1 T milk
  • 2 tsp sugar
  • Whipping cream, lightly whipped (optional)

    Combine flour, sugar, and baking powder; cut in butter with a pastry blender until mixture resembles coarse meal. Stir in raisins or other fruit. Combine milk and egg and mix with wire whisk. Gradually add milk mixture to the flour mixture to form a soft dough, stiffing just until dry ingredients are moistened. Turn dough out onto a lightly floured surface, and knead lightly 4 or 5 times.

    Roll dough to 1 inch thickness; cut with a 2 inch biscuit cutter/or into cut into triangles. Place on lightly greased baking sheets. Brush with 1 T milk and sprinkle with sugar. Bake at 400 for 10 minutes or until lightly browned. Serve warm with whipped cream and jam.

notes

For an extra treat, melt some chocolate chips and drizzle over the scones.
