Pear and Bleu Cheese Salad

Makes 4-6 servings

This is a delicious salad to accompany any meal or just add some grilled chicken, steak or salmon for a complete meal.

ingredients

  • 2 small heads, Boston lettuce torn into pieces
  • 2 ripe pears, sliced
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup walnut halves
  • Dressing:
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp salt
  • 1/2 tsp dry mustard
  • juice of 1/2 lemon
  • 1 clove garlic, m inced
  • 5 T tarragon, vinegar
  • 2 T light olive oil
  • 1/2 cup vegetable oil
  • 1 egg slightly beaten
  • 1/4 cup light cream

directions

Divide lettuce among 4 plates and arrange pear slices over greens. Top with bleu cheese and walnuts. Prepare dressing by combining all ingredients in a jar and shaking vigorously to blend. When ready to serve, pour dressing over salad and serve

notes

You can substitute pecans for the walnuts and Gorgonzola for the Blue Cheese.Make sure that the pears are ripe. If you don't have any, use granny smith apples instead. Dried cranberries can be added too
