Spanakorizo - Spinach with Rice
This is a hearty dish served all over Greece. There are variations from region to region. Feel free to alter with your tastes in mind. Submitted by Angela Sifakis
ingredients
- 2 lbs spinach
- 1 cup chopped green onions
- 1 leek chopped (optional)
- 1/2 cup olive oil
- 1 1/2 cups short grain rice, rinsed and drained
- 2 tablespoons lemon juice
- 1 tablespoon chopped parsley
- 1 tablespoon chopped dill
- 3 cups water
- salt and pepper

Wash spinach very well. Remove the stems, drain leaves well and tear into pieces.

In a deep pan gently fry onion and leek in oil until soft. Stir in rice and cook for 5 minutes, stirring occasionally. Add remaining ingredients.

Bring to a boil and add spinach. Stir well, cover and cook gently for 15 minutes. Remove from heat, leave tightly covered and allow to stand for 5 minutes before serving.

Serve hot as an accompaniment to main meals, particularly grilled meats and fish.

This is equally good served cold.
