Heavenly Sole

A mild, white fish with great Parmesan flavor.

ingredients

  • 2 lb.fillet of sole, flounder, tilapia, or other mild white-fleshed fish
  • 2 T. lemon juice
  • 1/2 c. grated Parmesan cheese
  • 1/4 c. butter
  • 3 T. mayonnaise
  • 3 T. chopped onion
  • 1/4 tsp. salt
  • Dash Tabasco sauce

directions

    Lightly spray cookie sheet or broiler pan with oil spray. Place fillets on prepared sheet; brush w/lemon juice and let stand 10 minutes.

    In small bowl, combine cheese, butter, mayo, onion, salt & Tabasco.

    Broil fish 4 inches from heat source for 5-6 minutes.

  • 4

    Remove from oven; spread fish w/ cheese mixture. Return fish to oven and broil 2-3 minutes longer.

notes

Use fresh Parmesan if possible.
