Sesame Pork Appetizers

A tasty, easy meat appetizer that can be made ahead and served chilled or room temp.
ingredients
- 1 1/2 lb. pork tenderloin
- 1/2 C. plus 1 T dry sherry, divided (can use Balsamic vinegar)
- 1/3 c. plus 1 T. soy sauce, divided
- 1/2 c. honey
- 1/2 c. sesame seeds
- 1 T. sesame oil
- 1 clove garlic, crushed
- 1/2 tsp. grated fresh ginger
- 1 green onion, finely chopped
- Spinach leaves

Place pork in large plastic bag. Combine 1/2 c. of the sherry(or vinegar) and 1 T. of the soy sauce; pour over pork, turning to coat. Marinate in refrigerator 1-2 hrs., turning several times.

Remove pork from marinade. Discard marinade. Spread honey on plate. Spread sesame seeds in shallow dish. Roll pork in honey, then in sesame seeds. Arrange pork on roasting rack set in roasting pan. Bake @ 350 degrees 25-30 min. or until meat thermometer registers 155 degrees. Let stand 5-10 min. and slice thinly on the diagonal. Set aside.

Combine remaining 1/3 c. soy sauce, remaining 1 T sherry (vinegar), the sesame oil, garlic, ginger and onion in small bowl. Place bowl in center of serving platter. Surround bowl with spinach leves. Arrange pork slices on top.
