Gourmet Pizza

This is so easy to make...serve for a meal, or cut into smaller slices and serve as an appetizer. Dad and I would eat this on many evenings when the you were away at college. Be creative with the toppings!

ingredients

  • 2 Boboli pizza shells or canned pizza crust.. I have even used thin flatbread that you purchase in the deli section. for a less filling, crunchier crust.
  • 4 cloves garlic, chopped
  • 1/3 cup olive oil
  • 2 cups mozzarella cheese
  • (finely grated)
  • 4 ounces goat cheese crumbled
  • 4 ounces feta cheese crumbled
  • 6 plum tomatoes, sliced
  • 1/4 cup freshly grated Parmesan cheese
  • Kalamata olives (optional)
  • salt and pepper to taste
  • 1/4 cup fresh basil, coarsely chopped
  • Extra Topping Ideas:
  • leftover grilled chicken
  • sliced onions
  • sliced mushrooms

directions

    Chop garlic and infuse in olive oil for 10 minutes. Spread approximately 1/2 of this mixture onto each Boboli crust. Sprinkle goat and feta cheese on crust, followed by mozzarella and Parmesan cheeses. Spread sliced tomatoes on top and the olives if desired. Salt and pepper to taste. Sprinkle with chopped basil. Drizzle with remainder of olive oil mixture. Bake on pizza pan or directly on oven rack.

    Bake at 450 for 10 minutes, or until cheeses are melted

notes

Add garlic cloves to a bottle of olive oil and keep on hand for this and other recipes...I use it when making my balsamic Italian dressing
