Pasta with Shrimp and Feta

ingredients

  • 1 pound pasta
  • 1 1/2 pounds shrimp, peeled and deveined
  • Pinch of red pepper flakes
  • 1/3 cup olive oil
  • 1 cup crumbled feta cheese
  • 1 tsp crushed garlic
  • 14 ounce can chopped tomatoes
  • 1/2 cup dry white wine
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp each salt and pepper

directions

Cook pasta, drain and set aside. Sauté shrimp and red pepper flakes in 2 tbsp olive oil 1-2 minutes or until shrimp are slightly pink. Arrange shrimp in a casserole dish; sprinkle with feta and set aside. Add remaining oil to skillet; saute garlic over low heat. Add tomatoes and juice and cook one minute. Stir in wine and next 4 ingredients; simmer uncovered for 10 minutes. Spoon tomato mixture over shrimp. Bake, uncovered, at 400 degrees for 10 minutes. Serve over pasta.
