Chicken Casserole

ingredients

  • 2 1/2 lbs. chicken, cooked & deboned (or 2-3 chicken breasts)
  • 6 oz. box long grain & wild rice
  • 1 can cream of celery soup
  • 1 small onion, minced
  • 2 oz. jar pimento
  • 1 cup mayonnaise
  • 1 small can water chestnuts, sliced
  • 1 pkg. broccoli, thawed (or French style green beans)
  • Parmesan cheese
  • Paprika

directions

Cook rice as directed on package. Add all ingredients, except cheese & paprika. Pour into greased and shallow 9x9 Pyrex pan or casserole dish. Sprinkle with cheese and paprika. Bake at 350° until bubbly, about 30 minutes.
