Ange's Awesome Scrambled Egg & Goat's Cheese Brunch
Delicious breakfast or brunch recipe for relaxed weekends at home, I make this one all the time. Served up with a big pot of coffee, it’s a sure way to keeping your man happy (and full!). Hope you enjoy it, wishing you lots of love & happiness in your marriage, Ange Field xx
Basic ingredients:
- 6 eggs
- 3 tablespoons Creme Fraiche (or full Cream if you prefer)
- some fresh chopped herbs to taste such as parsley/dill/basil/chives (any or all of these will do depending on preference)
- pinch salt
- couple of shakes of cracked black pepper
- some chopped goat’s cheese (approx. small handfull)
- 4 slices of pumpernickel or rye bread
- butter
Optional:
- smoked salmon
- tomatoes
- bacon
TOAST: Toast the bread and butter it onto plates ready for the scrambled eggs.
BACON & TOMATOES(Optional): cook bacon & grill tomatoes if using (see notes).
SCRAMBLED EGGS (with Optional SMOKED SALMON): Crack eggs into bowl. Add Creme Fraiche (or cream), salt, pepper. Wisk. Add herbs, chopped goat’s cheese (Optional: add chopped smoked salmon if using in eggs, see notes). Stir to combine. Heat frypan, add butter to melt, add eggs and cook to scramble.
SERVE: Serve eggs on the toast, with some extra herbs, cracked black pepper and crumbled goat’s cheese to garnish.

- Hand wisking is sufficient (hand wisk, or fork) - Smoked salmon or bacon can be broken up and cooked in eggs, or served on top/side of eggs - Watercress makes for nice side garnish under salmon - Grilled half tomatoes also make nice side garnish
