POTATO SOUP

ingredients

  • 4 large potatoes, peeled & cubed
  • 1 medium onion, chopped
  • 1 tablespoon butter
  • 1 chicken bouillon cube
  • 1 tablespoon parsley
  • 1(3-ounce) jar bacon pieces
  • 5 cups water
  • 1 cup milk
  • 1/4 cup flour
  • 1(12-ounce) package Cheddar cheese
  • salt and pepper to taste
  • sour cream to garnish

directions

In a stock pot, boil potatoes in water. Add in onion, butter, seasonings and bouillon. Mix together milk and flour and add to potatoes. Simmer for 30 minutes. Add cheese and bacon and stir.
