Michael's Pumpkin Soup
Best pumpkin soup ever - even Len and Kate can make it
ingredients
- 30g butter
- 2 onions
- 2 medium potatoes
- 750g pumpkin
- 600 mL chicken stock
- 1 cup milk
- salt and pepper
- chilli flakes (optional)
- 1 cup cream
- chives or parsley

Chop onions, peel and dice potatoes and pumpkin. Heat butter and saute onions until golden brown. (add chilli flakes at this time - optional)

Add potatoes, pumpkin, stock and milk.

Cover and simmer gently for about 30 minutes or until vegetable are tender.

Let cool for about 10 minutes then sieve or puree in processor or blender and add salt and pepper.

Makes a lot so refrigerate what is not required. Gently reheat desired amount. If you want you can add cream.

Serve garnished with chopped chives or parsley.
