Chicken Stir Fry with Walnuts
ingredients
- 4 Tablespoons oil
- 1 1/2 whole walnut meats
- 1/2 teaspoon ginger
- 2 cloves garlic, sliced
- 3 lbs. chicken
- 1 egg white
- 1 1/2 Tablespoon cornstarch
- 1 Tablespoon dry sherry
- 1 Tablespoon sugar
- 2 Tablespoon soy sauce
- 1 teaspoon cornstarch
- 1/2 cup chicken stock or water

Measure ingredients and have ready. Bone and skin chicken and cut up into 1" cubes. Mix with unbeaten egg white, then toss in 1 1/2 Tablespoon cornstarch. Mix 1 teaspoon cornstarch with chicken stock.

Set wok over high heat, swirl in oil and count to 20. Add walnuits and quickly stir fry for 3 minutes. Do not let them darken or they will be bitter. Remove with slotted spoon to bowl. Add ginger and garlic, stir once or twice. Add chicken, stir fry for 3 minutes more. Push to one side, stir up cornstarch mixture, pour down side of wok, stir until sauce thickens and chars. Stir in chicken and walnuts.

Serve over cooked rice.
