Halloween Spice Cake
A rich, flavorful cake that isn’t so spicy it hurts.
ingredients
- 1 1/2 C flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 Tb unsweetened cocoa powder
- 1 Tb cinnamon
- 2 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- 1 C sugar
- 1/4 C brown sugar
- 1/3 C oil
- 2/3 C unsweetened applesauce
- 2 eggs
- 1 tsp vanilla
- Powdered sugar for dusting

Preheat oven to 350*F. Butter and flour a 9x5" loaf pan. Set aside.

In a medium bowl, combine flour, baking powder, salt, cocoa, cinnamon, ginger, nutmeg, and allspice.

In a large bowl, beat together sugar, oil, applesauce, eggs, and vanilla to blend. Add dry ingredients and stir until just blended. Pour the batter into the prepared pan and smooth the top with a spatula.

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes. Unmold and place on a wire rack or serving platter. Dust with powdered sugar, cut into slices, and serve.
