Sausage Cheese Balls

These are so easy to make. I freeze the cooked sausage balls, and when my daughter wants a snack, she just pops a few in the microwave.

ingredients

  • 2 2/3 cups Original Bisquick baking mix
  • 1 pound bulk pork sausage, at room temperature
  • 4 cups shredded cheddar cheese (16 ounces)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried parsley flakes
  • Grated onion, to taste (optional)
  • Barbecue sauce or chili sauce, if desired

    Heat oven to 350°. Lightly grease bottom and sides of jelly roll pan, 15-1/2 x 10-1/2 x 2 inches.

    Stir together all ingredients, using hands or spoon. Shape mixture into balls no bigger than 1 inch each. (I use a cookie scoop to ensure uniform size.) Place in pan. (The balls tend to expand while baking, so split into multiple batches to avoid overcrowding.)

    Bake 20 to 25 minutes or until brown, but do not overcook. Immediately remove from pan. Serve warm with sauce for dipping.

notes

I usually double the recipe and use one pound regular sausage and one pound of spicy. Italian sausage works well too. I may reduce the Bisquick to 2-1/2 cups next time I make these.
